Chicken Soup to warm you up on a cold January day

This chicken soup, made from scratch is really easy to make. And apparently a good chicken soup can strengthen your immunsystem and chase away those winter flus. There are few things as deliciously soothing – and here is our best recipe!

I’ve been having a cold all last week with no voice and in general not feeling great. So this chicken soup was a much needed remedy on my road to recovery. For who has the time to stay in bed? Especially when catching up on emails after a 2 week Christmas holiday!?

The chicken soup I made was super easy to make and adapt to your own taste buds with spices and chilly. Here is the basic recipe, before you go on and make it your own…

Chicken Soup, serves 4
Ingredients
meat from one whole chicken, approx 800 grams.
1 1/2 chicken stock – made from the whole chicken carcass
1 box plum tomatoes
4 potatoes, flavoursome and medium sized
2 large carrots (or many more if you have smaller ones)
1⁄2 leek
3 cloves of garlic
1⁄2 tsp turmeric
a bunch of flat parsley
We use organic vegetables as well as organic/free range chicken.

Method
1. Dice the chicken meat into cubes.

2. Bring stock and box tomatoes to the boil while chopping up the vegetables.

3. Fry the vegetables lightly in the pan with some oil and ad them to the soup. Ad the chicken meat and then the turmeric, salt and pepper after taste. Allow to simmer for 10 minutes.

4. Serve the soup hot in a bowl with lots of freshly cut flat parsley on top.

Ways to change the soup; jazz it up a notch by using curry and tabasco. Replace the parsley with coriander.
