Salmon fillet and Mango Salsa family dinner in less than 30 minutes

This weeks family dinner recipe is not only healthy but quick to prepare; Meaty, flaky salmon with a creamy mild taste, this time with an exciting tropical twist. And you’ll be able to achieve dinner on the table in less than 30 minutes.

Step one is to ensure fresh salmon fillets. It shouldn’t smell like fish, it should smell like the sea and be nice and pink looking, firm-fleshed and meaty, with not too much visible fat.

Salmon
700g Salmon fillet
Olive oil
Salt & Pepper to taste

Melt the butter in a frying pan. Add the salmon skin-side down, season with salt and freshly ground black pepper and squeeze over a little lemon juice. Fry for 3-4 minutes, then turn the salmon over and fry for a further 2-3 minutes, or until cooked through. Important to cook on medium and not high temperature to avoid the fish to get oily.
You can also choose to oven bake, grill of steam your salmon as an option, depending on personal preference.

Mango Salsa
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
1/2 medium red onion, finely chopped
1 Jalapeño chile, minced to taste
3 Tbsp fresh lime juice
Salt and pepper to taste
Garnish with chopped fresh coriander

You may want to consider adding chopped cherry tomatoes and diced avocado to your mango salsa, depending on taste.

Serve with rice and green beans. Smakelig måltid!

Any left over can be served together with a green salad in tortilla wrap for lunch. Recipe image from godfisk.no
