What’s in season; Mackerel

It’s nothing quite like being served fresh mackerel. Mackerel is in season and are easy to find and reasonably priced at the moment. Mackerel are round oily sea fish with it’s rich taste and dark flesh with a high content of healthy Omega-3 fatty acids -and we think it’s absolutely best when served together with cucumber salad.

Cucumber salad
1 cucumber, thinly sliced
1 teaspoon sugar
2 tablespoons vinegar
5 tablespoons water
salt
pepper

Wash and slice the cucumber. Mix the sugar in vinegar and water. Add salt and pepper after taste and let it rest under cling film in the fridge for at least 30 minutes. Make sure you’ll turn the cucumber slices in the vinegar mix now an then.

Cooked fresh mackerel
mackerel fillets (usually 2 per person)
salt
pepper
butter
3 dl white flour
1 bunch fresh parsley

Rinse and dry the fish. add white flour and chopped parsley and some pepper in a plastic bag. Have the mackerel fillets in the bag and make sure they are covered in flour and parsley before you remove them from the plastic bag and fry the fillets in butter, only 2-3 minutes on each side. Salt and pepper after taste.

Server the freshly cooked mackerel with a dash of crème fraiche and cucumber salad. Tip: steamed potatoes and cauliflower may also be served with mackerel.
